The Bitouzets farm their narrow slice of Santenots with the same zero-compromise approach as all their sites in the village—organically, with zero chemical herbicides or pesticides. All fruit is farmed and harvested by hand.
This combines the elegance of the Aussy but with more aromatic complexity and while this too is quite ripe, it does not pass into the realm of the roasted.
The textured and sappy flavor profile is round and robust with the classic finishing austerity of Taillepieds plus outstanding length.
This is a gorgeous wine whose only nit is a bit of warmth and one that will require some time.
